This is an amazing make-ahead dish for any time of day. Brunch? Yes. Lunch? Yup. A side dish? Yes. Dinner? Yup, that too. Full of protein, veggies and healthy fat too, it’s like a one pot wonder, especially for busy weeks. It’s one of my all time favorites from The Simply Real Health Cookbook for that exact reason: it’s the kind of thing you can make on a Sunday and eat well for most of the week because of it, adding things as you go throughout the week. Or the perfect way to end the week too: and use up whatever veggies are about to go bad in your fridge.
