Eating healthy doesn’t have to be HARD. Or time consuming. Or complicated. This golden BBQ slaw & chicken recipe isn’t any of those things. It’s fresh and flavorful… and it literally took me 7 minutes to make in real time.
You can watch the time lapse 1-minute version right here to see how it all comes together!
It’s sooo good, and so easy. (The full recipe is below!)
I share recipes and videos like this because it’s my life’s mission to help people realize that you can eat incredible, delicious, vibrant food— and it doesn’t need to be a huge chore or headache. It CAN take less time than it takes to shower or pick up your kids or vacuum the house. And it can be a non-negotiable when it’s this easy. It is in my life.
Because eating this way doesn’t just feel good, it DOES good things for your whole physical, mental, and emotional being. When we upgrade what we eat, we upgrade everything else in our lives. Your mood, your digestion, your skin, your energy, your relationships, your hormones, your sleep. All of it.
So try this recipe, or one of the other 10-minute ones below! And see how simple (and fun, and delicious) healthy eating can really be.
Golden BBQ Slaw & Chicken Recipe:
The recipe of the summer. Mark my words.
Main ingredients:
Chicken breast
Cabbage mix (I got mine from TJ’s)
Radishes
Cucumbers
Avocado
For the Golden BBQ Sauce:
3/4 cup olive oil
1/2 cup maple syrup
3/4 cup whole milk yogurt
3 TB hot sauce
1 lemon, juiced
2 tsp pepper
2 tsp sea salt
Directions:
Make the sauce by blending all ingredients together. Marinate chicken breasts (to “outsource” that part of dinner later ?). Use the sauce as a dressing right before eating. I used TJ’s cabbage mix tonight with shaved radishes, cucumbers and avocado. Save any extra dressing/sauce for later in the week. Or freeze!
