Fall is {officially} here and I can feel it in my bones.
The light is shifting ever so slightly. My afternoon tea is warm instead of iced.
And the first soup of the season happened earlier this week.
If the calendar didn’t already say so, then the shifts in our rituals, routines & kitchens have made it beyond clear: it’s Fall.
And can I let you in on something? I used to hate it when Summer ended. Truly.
When all the Fall lovers would be going on and on about pumpkin spiced things, boots, leaves, cozy sweaters and candles, I was like…. um, no thank you? Around here, those things are just the norm from October through June.
But– in the last few years, I’ve really leaned into the wisdom that shifting seasons has for us. And that says a LOT, coming from this summer gal.
And one of my favorite things about Fall that I am fully here to admit and embrace?
The fact that it’s the unabashed season of soup.
And I am heeeere for it. It’s one of my secret superpowers, making a soup out of practically anything. So Fall brings out my creative side, in that way.
(Also file my excessive gear for rainy day walks under “fall creativity,” too. Nothing’s stopping me from getting outside, this season or any season.)
Because it’s soup season, I thought what better time than now to do a little round-up of alllll my favorite one pot soup loves?!
Here are the soups I have on repeat all Fall and Winter long:
01. Veggie & Red Lentil Curry Stew: Hearty, flavorful & only 5 main ingredients. Bonus that it lasts for several meals throughout the week and you can use pretty much any veggies you have/love. It’s sooo easy, so rich, and so so nourishing.
02. The Coziest 3 Ingredient Tomato Soup: The best soups are uncomplicated & unfussy. This one checks all the boxes and it the most delicious tomato soup you’ll try. I bet you’ll never buy it premade again after this simple recipe.
03. Roasted Kabocha Squash Soup: One of my very favorite soup recipes of all time (and that’s saying something….. I’m kinda the unofficial soup queen tbh). The squash makes it the most velvety and decadent texture, plus you can’t beat the easy ‘gredies. I love it with a toppings bar: Greek yogurt, crumbled rice crackers, chopped kale, chia seeds, avocado, shredded chicken, and pesto are all sooo good on top.
04. Roasted Poblano Tortilla Soup: Mmmm, a little spicy + savory action with this one! This soulful bowl of soup is warming through and through and filled with rich, Mexican-inspired flavors…. and as always, the easiest to make. Are you sensing a theme here? Maybe there’s a reason I love soup so much??
05. Cozy Roasted Parsnip Soup: You. Guys. Don’t sleep on parsnips. Or, if you truuuuly just don’t care for them, try this soup with carrots, squash or sweet potatoes in their place. I promise, you won’t be disappointed with this festive Fall soup.
06. Easy Tomato Carrot Soup: Tomato soup, but with a fun upgrade. Carrots not only add more richness to the color, but they bring an extra thickness and almost sweetness to the soup that I can’t get enough of. Mmm, soup for the soul.
07. The Poblano Quinoa Chicken Chili: A oldie but a goodie (and dare I say my favorite soup ever?). Trust me on this one. Everyone loves it. I survived on it right after Noah was born. It’s just always the answer this time of year.
