I’m not sure why- but for some reason, I’ve never thought to roast fruit. Grill it? Yes.

Except, now I know how much I’ve been missing. Roasted apples are—stop it. Too good. What?! Who knew.
A little kitchen experimento, gone right this week. Too right, because now I can’t stop putting them on everything- smoothies, salads, or just straight up snacks. Try it!
Roasted Apple + Walnut Parfaits
Makes 2 servings
1 large apple (a sweeter variety)
1/2 cup walnuts
2 cups organic greek whole milk (or coconut) yogurt
3 teaspoons cinnamon
2 teaspoons coconut oil/olive oil
pinch of sea salt
pinch of chia seeds
drizzle of maple syrup (optional)
Directions:
Chop apple into bite size pieces. Toss with olive/coconut oil, LOTS of cinnamon and sea salt. Roast at 400 till slightly browned (approximately 15-20 minutes).

Layer a glass with Greek (or coconut) whole milk yogurt, chopped walnuts, chia seeds and apples. Repeat for another layer.

Optional to drizzle with maple syrup! Can be assembled ahead of time for busy weeks. Try them in mason jars with lids for this purpose.

Store extra roasted apples in a sealed container in the fridge. Keeps fresh for up to 7 days.
