The salad you won’t be able to stop making this summer.
You guys know I always have one per season that I literally just can’t stop with, because then, well– it just keeps things S I M P L E. And healthy. And delicious.
And because #saladingisaverb around here.
So, every dinner where I don’t know what to make or bring: it’s just this, all this, and only this salad.
Ok, and fine…..this and all the other recipes from the current Meal Plan, are pretty much on hot repeat around here. I may have totally outdone myself with this season.
How do I know? It’s been totally stress free, and there are so many easy and fun recipes I can whip together in a hot second. Lots of which, I already have memorized, which is always my sign.
No lack of inspiration = no lack of motivation.
And thank goodness for that, in this season of the year, and this season in life too, as we pack up our house over here and get ready for some big trips and big moves in the next few weeks. These recipes have been my lifesavers!
So today, a little treat for you:
A FREEBIE of the best kind, and mini sneak peak of one of my favorite recipes in the Meal Plan: This Baja Inspired Chopped Caesar.
So you can get #salading and simplifying, in the best way this season.
The Baja Inspired Chopped Caesar
Makes 4-6 servings
Notes: this salad is great with grilled wild salmon, shrimp or free-range chicken on top too
1 large or 2 small red leaf lettuce heads
1 avocado, cubed
1/4 cup or 1 handful cilantro, chopped for garnish
2-3 radishes, thinly sliced
Baja Caesar Dressing:
Makes 4 servings
Notes: Don’t just keep this dressing to the salad- try it on grilled veggies, as a marinade for any meat or seafood, or tossed with quinoa or rice.
½ cup whole milk greek yogurt
¼ cup olive oil
2 teaspoons gf worcestershire sauce
2 teaspoons anchovy paste
2 teaspoons dijon mustard
2 limes, juiced
½ teaspoon sea salt
1 teaspoon pepper
Blend all dressing ingredients together. Assemble salad ingredients and toss with dressing. Optional to sprinkle with extra chopped cilantro to serve.
