Cilantro-Shrimp & Pineapple Skewers:
Another great sauce to add to the files– cilantro perfection at it’s finest.
And although it makes a big batch {great for freezing} and as a great marinade or sauce for most seafood, veggies, potatoes or meat, there’s no better combo than shrimp, pineapple, a few veggies and a grill this time of year. Throw a few skewers in, and you have a great, easy meal you can prepare ahead of time or whip together within 10 minutes.
Cilantro- Sauce Ingredients:
1 head cilantro
1 head parsley
2 cloves garlic
3 TB capers
1.5 TB red wine vinegar
1-2 tsp red pepper flakes (depending on spice preference)
sea salt + pepper
olive oil and water to blend
Combine all ingredients in a blender and blend to combine.
Skewer Ingredients:
wild caught shrimp (bigger are better if you are grilling)
pineapple chunks
assorted red pepper, zucchini, or eggplant chunks (or any other veggies you like) to thread on the skewers
wooden* or metal skewers
* if using wood skewers, be sure to soak in water for at least 10 minutes before you thread the shrimp, pineapple and veggies.
Directions:
1. Marinate shrimp, pineapple and veggies in the cilantro sauce (can be done up to 24 hours beforehand). Thread on skewers:
2. Place on BBQ and rotate until the shrimp are cooked through on medium heat.
Serve with organic grilled corn, a green salad or my summer garbanzo bean salad.
