Sarah’s Summer Berry + Fruit Crumble
Ingredients:
Any combination of blueberries, strawberries, blackberries & raspberries (or peaches, plums, apples or pears, depending on the season) (yes, you can also use frozen berries)
For the crumble:
1 cup almond meal (almond flour)
1 cup unsweetened coconut flakes
1/2 cup walnuts, chopped
2 tsp vanilla extract
2 tsp cinnamon
3 TB organic coconut oil or butter, melted
2 TB raw honey or organic maple syrup, melted
Directions:
Slice strawberries and mix with any other berries to add to greased muffin tins {minis} or a larger pie pan {regular size}. In a seperate bowl, mix together the rest of the ingredients, adding the melted honey and coconut oil last. Toss to mix with your hands until you get a crumble like consistency. Sprinkle over the berries and bake at 375 for 20 min, or until the berries start bubbling.
