And, I know, I know. I told myself (and you) I would take this week off from blogging. But, turns out, I don’t want to.
Mainly, because you guys actually need this.
It’s like the kickoff to summer. In your own little mouth.
Plus, it’s one ingredient long, with endless varieties (peaches!? strawberries!? blueberries?! coffee?!).

The Easiest Watermelon Granita
Makes 4 servings
2 cups ripe watermelon, cubed
Directions:
Blend watermelon until liquified. Pour into a bowl or loaf pan, and let freeze for an hour. Remove and scrape the mixture with a fork. Place back in the freezer, pulling out every hour or two and scraping, until frozen. Scoop into cocktail glasses and serve cold.
Store in the freezer for up to 1 week.
Make a even sexier after-dinner party dessert with a splash of lillet, white or rose wine before freezing.
