Last week on instagram, I snapped a quick little pic of my insane trail mix meal prep- making over 250 little bags of goodness for an upcoming healthy tailgate party and cooking demo (Thursday, and…. yes that’s a real thing) and a charity walk that weekend. With homemade caramel corn, nuts, pumpkin seeds, coconut, golden raisins, etc.
And these.
And here I was thinking you all would go crazy over homemade caramel corn. No, no.
All you wanted was the homemade apple chip recipe. Begging.
Man. I must be doing something right.
So, I write this with a mini warning. While these are not exactly in my “quick recipe” category, the taste is so worth it. Just slice and bake, do something else productive and come back in an hour. No flipping, no tending to them. That’s it. And you can do 3 trays at once.
Easy Homemade Apple Chips
Makes 4 servings
1 apple
Preheat oven to 225°F and line 2 baking sheets with parchment paper. Slice apples with a mandoline slicer and spread out on the baking sheets, being careful not to overlap any of the slices. Bake for 1 hour and 15 mins, depending on your oven.
They will be a bit soft still when you remove them from the oven, but should crisp up within a minute of cooling. Sprinkle cinnamon over the top if desired.
Store in a sealed container in the fridge. If you have any left, that is (wink).

I *just* finished making these and they are super good! Had to increase cooking time by about 20 minutes to ensure a nice snap. I’m so glad you posted this! No more spending 5 bucks on something that costs less than a dollar to make!
