A dessert that you never have to feel bad eating, is dessert after my own heart.
One that happens to make you feel like a little kid again, and I’m done for.
So, because it’s hot and it’s summer and I can’t stop sneaking little cold bites of these in the fridge and smiling, I think you might need this one too.
Fruit + Coconut Creamsicles
Makes 6 popsicles
1 can coconut milk
2 cups strawberries, blueberries, blackberries, peaches, plums or cherries
1/2 tablespoon vanilla extract
3 tablespoons maple syrup or honey
In a blender, add fruit, vanilla and maple syrup/honey and blend until well combined. Add to a bowl. Blend the coconut milk next, and either alternate fruit and coconut layers (as pictured above), or blend all ingredients together before filling your popsicle molds.*
Freeze for at least 4 hours before enjoying.
Sarah’s note: Although the alternating layers look cooler, I think they taste better when all blended together.
*If you don’t have popsicle molds, fill small dixie cups halfway with liquid and freeze. When ready to eat, peel away the cup layer and enjoy!
