I love it when healthy food is all the rage.
Trendy, if you will.
That’s how I know it’s ok to post it. Other people besides me think it’s cool.
I know these might be a little too trendyhealthy for some of you, but they pass my taste test. Even more than that though, they pass my approval for healthy food on-the-go options {bought}, as well as easy make ahead, grab and go lunch options {make your own}.
#PCC and #Evolution Fresh get all the credit on this idea. Collard Green Wraps are the new wrap in the house!
Oh wait. You thought normal wraps were healthy already? Better than bread because they had less “carbs” and were “low-fat”?
Please.
The 90’s are over.
Let’s leave that decade’s diet mentality in the past, where it should be.
There are way more important things to focus on this day in age– like the actual ingredient list of the food. Of what’s even in it!
Most of those things (wraps, that is) are total CRAP. That’s right. IN CAPS. Full of hydrogenatred oils, processed wheat, sugars and chemicals to give them a palatable texture and a long shelf life.
In other words, not a normal, real food. A collard green leaf on the other hand? Well, there is NO ingredient list to start {point 1}. It’s a totally normal food that just grows in the ground {point 2}. And more detoxifying minerals and vitamins per bite than any other food category out there (same for all dark leafy greens like kale, spinach, arugula, etc) {score}.
Plus, you can wrap them like burritos and throw them in your car/purse/work fridge/picnic basket/beach bag {bonus points}. Less messy but just a healthy as salads. Healthy {busy} summer perfection, in my opinion.
Mediterranean Hummus Wraps:
Ingredients:
Feel free to swap out ingredients as you see fit– there are no rules with the fillings, just that you leave enough room to roll them up! If you are worried about the taste of collard greens {for kids or picky adults}, just add a bit more hummus or avocado.
1 bunch of collard greens (the big fan-like greens)
1 red bell pepper, thinly sliced
2 cucumbers, thinly sliced with a knife or into ribbons with a vegetable peeler
2 avocados, sliced
1 container clean hummus (you can recognize all 4-5 of the ingredients)
mixed greens or chopped romaine (I used chopped romaine for a little crunch)
1 lemon (for the juice)
Directions:
1. Wash all ingredients. Slice the cucumber, pepper and avocado and set up in an assembly line for ease. Remove the stem of the collard greens (just the part that sticks out from the bottom of the leaf) and discard.
2. Spread the collard green leaf out. Smear a big spoonful of hummus in the middle of the leaf. Add your mixed greens or lettuce on top, then the red bell pepper, cucumbers and avocado. Squeeze with a bit of lemon juice and sprinkle with sea salt and pepper.
3. Roll the side of the collard green, then tuck the shorter sides in before you roll the rest. Quick! Before it unrolls, wrap it like a burrito in foil or saran wrap and stick in the fridge.
*These stay fresh for up to 5-6 days in the fridge.
