Because when all else in life is crazy, cooking up a little something, early in the quiet of the morning is for me, a tiny act of self care. And at least a different side of my brain getting the time & space to work and create. Creativity, in any capacity is so good for the soul, don’t you think?
In case any of you are needing the same this week (or just a guilt-free pumpkin treat) here’s my recipe for these amazing muffins:
GF Mini Pumpkin Muffins
Makes 24 mini muffins
1 banana, mashed
1 cup pumpkin, puréed
3/4 cup coconut oil, melted (or olive oil)
1/2 cup quinoa flakes or quinoa flour
1 cup oat flour
2 eggs
1/2 cup maple syrup or 1 cup coconut sugar
3 teaspoons cinnamon
2 teaspoons pumpkin pie spice
2 teaspoons vanilla
1 teaspoon baking soda
Preheat oven 350. Mix all ingredients together and place in the fridge for 5 minutes. Add batter to mini muffin tins and bake for 20 ish minutes or until golden brown.

For quinoa flakes, does that mean dried quinoa, or is that something totally different? This may be a genius way to get my kids to eat quinoa which is one of the only healthy things don’t eat!
