3 Ingredient Roasted Tomato Soup via @simplyrealhealth

Let’s face it:

If all that’s in your oven is cookies, all you’re gonna eat is cookies.

If you have enough patience to be baking up those treats, trust me, you have more than enough time for some good food baking too.

Let’s compromise, at least.

Stick these in the oven WITH your cookies, and everyone wins.

Like this 3 ingredient, couldn’t-be-easier Roasted Tomato Soup.

Makes 3 servings

Ingredients:

8 roma tomatoes, sliced

2 cups baby tomatoes

2 leeks, sliced

2 cups organic chicken broth (or more)

sea salt and pepper to taste

Preheat oven to 400 and line a baking sheet with parchment paper. Toss tomatoes, baby tomatoes and leeks with olive oil and sprinkle with sea salt and pepper.

Roast for 30 minutes, then let cool slightly. Blend with broth, and adjust seasonings as needed. Serve warm.

Wanna get crazy? Add in some garlic to the roasting process, some basil to puree, or add in pulled chicken, organic sausage, or spinach.
