Today, I popped on down to King 5 News, on their New Day Northwest Show, bringing with my a little arsenal of easy (almost) 5 minute meals that taste amazing, are so healthy for you, and did I mention- super easy?
Aka, real life approved.

The Easiest Chicken and Vegetable Curry
Notes: This curry sauce is made with only two simple ingredients that you can always have on hand in your pantry, and is the perfect quick, healthy meal this time of the year. Gluten and dairy free too! Serve hot on it’s own, or oven rice or cooked quinoa.
1 organic chicken breast, sliced or chicken tender pieces (or other high quality meat or seafood)
2 teaspoons (or more) red curry paste
2.5 oz or 3 tablespoons regular coconut milk
1 cup (or more) veggies of your choice (carrots, broccoli, snow peas, red peppers, spinach)
sea salt, pepper and cayenne pepper to taste
Cook chicken first over medium high heat, flipping sides when the first is completely browned. Add in veggies and cook another 2-3 minutes.
Add in curry paste, then coconut milk. Stir all ingredients to combine. Sprinkle with sea salt and pepper, and add a dash of cayenne pepper if desired.

I loved this recipe! First time trying red curry paste. I made a note that a small amount of garlic could also be added for more flavor. I’ll also make sure my stir fry vegetables include onion next time as I was missing that in my stir fry vegetables. I used the entire can of coconut milk to make more sauce and upped the red curry paste accordingly. Quick, easy lunch or dinner. This is a keeper!
