Missed my full matcha guide post a few weeks ago, did you? Well, before you dive into this one today, you’ll want to read it first to know what this matcha obsession of mine is all about, where to find it, and why it’s so good for you.
Then, we can talk about doughnuts, mmm k?
Mini Matcha Chocolate Almond Doughnuts (GF)
Makes 2 dozen mini doughnuts
Notes: You will need a cutie mini doughnut pan, like this one. Otherwise you can try to make little donut holes instead!
1 1/2 teaspoons matcha powder (my favorite and the best tasting organic one I’ve found is by Matchaful. I called the owner, and now all Simply Real Health readers get 20% off their order. Just use the code “SIMPLYREALHEALTH” at checkout. Woop!)
1/2 cup coconut flour
1/2 cup almond flour
3 eggs
1/2 cup coconut sugar
1/4 cup coconut oil, melted
1 tablespoon maple syrup
2 teaspoons vanilla
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon almond extract
cocoa powder for dusting
Preheat oven to 350 and grease doughnut pan well with coconut oil spray.
Combine wet ingredients in one bowl, and dry in another. Slowly mix the wet into the dry bowl, mixing well to combine. Add batter to a plastic bag and cut off end corner to easily pipe batter into the pan.
Bake for 6-10 minutes until golden brown. Remove from pan and dust doughnuts with cocoa powder as they cool.

I don’t own a doughnut pan. Do you think making these as round doughnut holes would work instead?
