In the segment, I’m show you guy a quick, easy, and super healthy comfort food type meal (under 6 minutes!). It’s the perfect way to squeeze in more veggies to your daily life… without feeling like it. Peppery Green Pistou with Zucchini Noodles, to the rescue.

Peppery Green Pistou
Makes 6 servings
Notes: The French style pistou is a cinch to make (no cooking or chopping required) and is an amazing way to get more hearty, awesome greens into your life, without even noticing.
1 cup spicy greens (I used Organic Girl’s Pepper Greens, but you can use any kind of greens you like)
1 small package basil
½ cup walnuts
1 clove garlic
¼ to ½ cup olive oil
splash red wine vinegar or ½ lemon, juiced
½ teaspoon sea salt and pepper
Place all ingredients in a blender, adding more olive oil if needed. Optional to add a dash of red pepper flakes to turn up the heat! Store in a glass jar in the fridge for up to 10 days.
Serve hot or cold over zucchini noodles, as a garnish for soup, in baked potatoes, over fish, steak, chicken or roasted vegetables, or mixed with Dijon for an amazing vinaigrette.
