Not at all sexy.
But definately real (life) right now.
This week has already been a crazy ride and it’s only Tuesday. I have nothing in my fridge, and no time for the store today. And, I’m hungry. So, this is lunch: canned garbanzo beans (rinsed) and drizzled with balsamic vinegar, olive oil, sea salt and pepper. Not an ideal lunch (no veggies!) but way better than opening the bag of chips and salsa that I was tempted to. Also, if you’re curious it’s actually surprisingly really good.
I can’t even imagine if you had a bit of avocado, some chopped parsley or basil, greens to go underneath, beautiful tomatoes, and some parmesan cheese to go with it. Oh. Am I recipe projecting on you?
But, for real. Try this next time you think you don’t have time. All you need are pantry staples [beans, olive oil, salt and pepper].

I have an even easier on the run lunch…from Trader Joes. Jars of large white (fava?) beans in a delicious tomato sauce. I think it’s a Greek import. I pop off the metal lid and heat it in its own glass jar, then pour in a bowl. It really needs no seasoning, although like anything prepared, could be be dressed up.
